This is not a dream.

This project has a purpose - to create new wines that blur lines and expand the boundaries of what wine can be. However, first and foremost, everything we make still has to taste amazing!

Bradley Beam has been making wine for over 20 years, both academically and commercially. He served as the Illinois state enology specialist from 2006-2018, and still takes on special projects with the Illinois Grape Growers and Vintners Association. He’s also an independent wine making consultant for several wineries in the Midwest.

From Brad:

“The first wines from this project are all aged in used bourbon barrels for at least 6-12 months to add a layer of complexity to what might otherwise be pretty straight-forward wines. Warm wood and vanilla flavors are balanced with the naturally fruity wine flavor profiles, and the barrels also add some tannin and heat to the finish, creating something like a lower-alcohol, easy-drinking cocktail. We decided to do these wines from the start to make a statement about our adventurous philosophy and set the tone for what we hope is a long career developing new, creative, and fun wines.”

“It’s like trying to drink whiskey, from a bottle of wine.”
